I would suggest calculating the centre block in the hole you have dug in the slime chunk (in terms of x and z only, y should be the base of the farm). Then make an AFK platform 120 blocks above that block (i.e., add 120 to the y coordinate of that centre block).
That should do the trick.
Reason: The player has a circle of radius of around 120 blocks only in which any mobs can spawn. By going that high, you are decreasing the number of entities in a chunk (by eliminating the chances of mobs spawning in undiscovered/dark caves below the farm), hence increasing the chances of a slime spawning in your farm.
Otherwise, you would have to spawn proof a very big area (unless your slime chink is in the middle of the ocean), which would take a lot, and I mean LOT more effort.
